Simple, quick dinners are one of my favorite things ever! I’m all about finding ways to get a satisfying meal on the table without needing to spend hours in the kitchen, especially with school starting again and trying to get back into a more scheduled routine.
Because as much as I love being in the kitchen, I’d much rather spend that time hanging out with my family when they’re around, you know?
I was trying to figure out what to make for dinner recently and remembered this Creamy Sausage and Potatoes dish that my mom used to make when I was a girl. I was a super picky eater (yup, unfortunately, it’s true!), but this was one dish I was always happy to see sitting on the table when we gathered for dinner.
Little did I know that one of the reasons my mom made it so often was because it’s easy to make and inexpensive too!
The thing that takes this dish from “just okay” to “wow” is good quality, seasoned ground sausage. Because the rest of the dish is pretty basic, the sausage really makes all the difference. Its flavor will permeate each bite, so it’s worth choosing a good brand for this sausage and potatoes recipe.

I kind of knew my family would like this Creamy Sausage and Potatoes, but it still made my day when I was met with these comments: “Mom, this is really good!” (from our pickiest eater) and “You need to make this again!” and “Wow, this is very tasty, Babe!” Our 18 mo. old gave her own approval by eating thirds.
And me? Well, I thoroughly enjoyed every bite. But what made it even better was the fact that it took me just a tad over 30 minutes, start to finish, to get this dinner on the table. Now that, my friends, is a true winner!
Creamy Sausage and Potatoes- a simple, quick dinner
Creamy Sausage and Potatoes- a 30 minute dinner
Ingredients
- 1 lb. quality ground Itialian sausage
- 1 med. onion, chopped
- 4 to 4 ½ c. potatoes, diced into ½ in. chunks (no need to peel, unless you want too!)
- 2 tbsp. flour
- 1 ½ tsp. salt
- ¼ tsp. pepper
- 1 c. milk
- parsley optional
Instructions
- Fry sausage and onion until browned.
- Add enough water to cover sausage, then simmer for 10 minutes. Do not drain!
- While sausage is cooking, dice potatoes. (I love using my Vidalia Chop Wizard for dicing the potatoes. Super fast!)
- Add the potatoes, salt and pepper to meat.
- Cover and simmer until the potatoes are tender, about 10 minutes.
- While the potatoes are cooking, whisk milk and flour together until smooth.
- Add to the sausage and potato mixture and cook on low to medium heat just until thickened, stirring occasionally.
- Top with parsley and ENJOY!

Dumb question from a beginner cook. I know it says not to drain after you add the water but do I drain the sausage grease before the water is added?

No question is a dumb question, Sarah! We all need to learn one way or another and I love that you are beginning to cook. That’s awesome!
I don’t drain the sausage grease both because there usually is very little with the sausage that I use and also because the little bit that is there adds a nice flavor to the recipe. If your sausage produces a lot of grease though, I’d drain most of it off. Hope that helps!

Turkey sausage doesn’t have much grease so id say no. Also if you used regular sausage like a jimmy dean or similar id still say no its not that much and adds more flavor. Think of it like you were making sausage gravy for biscuits

Could you use frozen diced potatoes in this?

I don’t have much experience using frozen potatoes but I would think they could work. The biggest thing is that they may cook faster and as a result, you may end up with the recipe being a bit soupy. I don’t think it would taste bad, it would just be a bit more like a soup than a skillet meal if that makes sense. If you try it, I’d love to know how it worked out for you.

This recipe as is, is very simple. I followed the directions, and it was fine. However, I wanted to kick it up a bit. I added Italian seasoning and then mixed in some shredded cheese. I also added some sauteed mushrooms and some white beans. These changes really popped this recipe up a notch. Thank you for a really solid meal to start with that I could really turn into a well-loved meal for my entire family.

Where’s the flavor? This is literally a “watered down” recipe. You cook your sausage, then boil it? Then add potatoes that won’t be covered in said water? That won’t cook the potatoes. I like the idea behind this recipe, but as written it has no flavor and poor execution.

Have you actually tried the recipe, Diane? As I mention in article, using good quality, seasoned sausage is what really “makes” this dish. You boil the cooked sausage to allow the flavor to really permeate the whole dish through the water. The potatoes get covered while they cook, so essentially they kind of get steamed, I guess. But trust me, they do cook and are not left raw. 🙂 Maybe this isn’t your type of recipe. That’s totally fine! But as you can see from the many comments others have really enjoyed it. I’m cooking this right now actually but just realized the recipe doesn’t say what temp to cook the ground beef after you add the water, what temp to cook the potatoes when you add them, or what temp to set the stove at when you add the milk mixture. I’m taking a guess and leaving everything at medium but would be super helpful if you could go back and add that to the recipe 🙂
