I think that these little bite-sized Cinnamon Sugar Donut Muffins taste a lot like a Snickerdoodle cookie. At any rate, the mix of cinnamon and nutmeg combined with a sugary topping makes them ridiculously delicious!

Why Cinnamon Sugar Muffins Are Our Favorite

  • Delicious – They are super flavorful with their nutmeg and cinnamon pairing and while they remind me a lot of a cinnamon sugar donut, I also think they taste an awful lot like a Snickerdoodle cookie!
  • No Deep Frying – Since they are baked, that means no greasy, oily mess to deal with and fewer calories, make that a plus all around!

Ingredients Needed for Cinnamon Sugar Donut Muffins

  • Sugar 
  • Butter
  • Milk 
  • Vanilla
  • Flour
  • Nutmeg
  • Baking powder
  • Cinnamon

How to Make Snickerdoodle Muffins From Scratch

STEP 1: Melt butter and combine it with the sugar in a medium-size mixing bowl. Stir in the milk and vanilla.

STEP 2: Then whisk in the flour, nutmeg, and baking powder. Mix well.

STEP 3: Spray a mini muffin pan with nonstick spray and fill each cup half full with the muffin batter.

STEP 4: Bake for 10-12 minutes at 375 degrees.

STEP 5: While the muffins are baking, prepare the topping by adding 1/4 of a cup of melted butter to a small bowl. In another bowl combine the sugar and cinnamon. 

STEP 6: Once the muffins are done baking, dip each one in the melted butter, then roll them in the cinnamon-sugar mixture.

Can You Make These Into Regular-Sized Cinnamon Sugar Muffins?

Yes! Instead of 24 mini muffins, you should get about 12 regular-sized. You may need to increase the cooking time just a bit.

Should You Use Muffin Liners? 

For any other homemade muffin recipe, I would say yes. However, because these donut muffins are rolled in the cinnamon sugar topping, it’s a little harder to get full coverage when muffin liners are used. So that’s why I just grease the pan instead.

Storing Instructions 

Once the muffins have cooled completely you can store them at room temperature or in the fridge. To freeze, just place them in a plastic bag and separate layers with parchment paper if needed.

Cinnamon Sugar Donut Muffins (aka Snickerdoodle Muffins)

These little donut muffins are perfect to munch on any time! They’re healthier than a donut, but just as delicious!

Ingredients

MUFFIN

  • 1/2 cup white sugar
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 1/2 tsp. vanilla
  • 1 cup flour
  • 3/4 tsp. ground nutmeg
  • 1 tsp. baking powder

TOPPING

  • 1/4 cup butter, melted
  • 1/2 cup white sugar
  • 1/2 tsp. cinnamon

Instructions

  • Cream together sugar and butter for muffins.
  • Stir in the milk and vanilla, then mix in the flour, baking powder and nutmeg just until combined.
  • Grease 24 mini-muffin cups. (I have this mini muffin pan and love it!) Fill cups half full of batter.
  • Bake at 375 degrees for 10 to 12 minutes or until a toothpick inserted in center comes out clean.
  • While muffins are baking, get the topping ready. Place 1/4 c. of melted butter in a bowl. In a separate bowl combine 1/2 cup sugar and 1 tsp cinnamon.
  • Once baked, dip each muffin in the melted butter then roll in the cinnamon/sugar mixture. Let cool before storing.

    It says to melt butter for muffins in ingredients. But instructions say to cream butter and sugar??

    Love these!! Did a little variation and used some powdered sugar on a few as my little one loves those powdered sugar donuts from the grocery stores… She’s in love! We make these all the time now! I make batches freeze then sugar them up later! Amazing!!! Thank you so much for the recipe!
