It’s a rare person that doesn’t love an oatmeal chocolate chip cookie! Am I right? Well, good news! These Oatmeal Chocolate Chip Bars are like your favorite oatmeal chocolate chip cookie but in bar form.
In other words, way less time-consuming to make but every bit as delicious! And who’s going to complain about a tasty dessert that takes all of 20 minutes to mix up and bake? You really can’t beat that!
Why We Love Chocolate Oatmeal Bars
- Easy to Make. These bars are made using just one mixing bowl, making the prep work and cleanup minimal.
- Simple Ingredients. Uses basic pantry staples, so you likely already have what you need on hand.
- Quick Dessert Idea. From start to finish, these bars only take 20 minutes! Perfect for when you are short are time or want something sweet on the fly.
- Budget-Friendly. One of my favorite inexpensive desserts! And it’s great for larger groups too since one batch makes 18 to 24 bars.
Ingredients Needed For Oatmeal Chocolate Chip Bars
- Flour. I use all-purpose but you could also substitute with gluten-free all-purpose too.
- White Sugar.
- Salt.
- Baking Powder.
- Baking Soda.
- Brown Sugar.
- Quick Cooking Oatmeal. I have never tried substituting this for any other kind of oats, but a reader mentioned in the comments that she used old-fashioned oats and it worked well.
- Chocolate Chips. I love using dark chocolate chips but they are delicious with milk or semi-sweet chocolate too.
- Egg.
- Canola Oil. You can also use another neutral oil such as vegetable oil. I have also substituted melted coconut oil as well and we really liked that. However, they will have a slightly different taste if using coconut oil.
- Vanilla.

Variations of Oatmeal Cookie Bars
Chocolate. You can use dark chocolate, semi-sweet or milk chocolate. And I think white chocolate chips could be really delicious too!
Double It. To feed a large group, use a jelly roll pan and double the recipe.

I’m so happy to hear that you enjoyed them, Scarlet!

These were soooo easy and economical. I added Scottish oatmeal and mine came out a little dry. Will try again with an extra egg!
Lydia Beiler
Yes, the Scottish oatmeal would work a bit differently. I bet the extra egg will do the trick! Glad you enjoyed them.

If the raw dough is any indication (I know, I know but couldn’t resist) these are going to be spectacular. Perfect recipe for my dairy allergy with Bake Believe Dark Chocolate Chips. Can’t wait to enjoy!
Lydia Beiler
I hope the final baked results ended up being just as delicious as the dough! And I’m so glad that you pointed out that these can easily be made dairy free as we have a friend that has a dairy allergy and I’m always trying to think of recipes that will work easily to share with them. And I hadn’t even thought about that this one would work!

Did you have a recipe on your website similar to this one but fewer ingredients and it was baked in a pan? I think it had cowboy in the title. I searched your site and did not find it.
Lydia Beiler
Hey, Christine! No, I don’t think it was my site as this is the only oatmeal bar recipe that I have on my site. Hope you can figure out where it was though. I hate when that happens!
Carole Smith
I used 4 packets of flavored instant oatmeal which equals 1 cup and omitted the 6 tbsp of sugar. I used white sugar instead of brown sugar. My husband gave them a thumbs up 👍🏻 Thanks for sharing the recipe! I will definitely be making these on a regular basis 😋
Lydia Beiler
I love the creativity! And glad that you both enjoyed the recipe, Carole.
Tamie
Wow these are so good and seriously just about the easiest cookie recipe I’ve ever tried! I did use Regular old-fashioned oats and it came out fantastic. Thank you for this recipe!!
Lydia Beiler
So happy to hear that you enjoyed these bars so much, Tamie! I just made them this weekend for a community picnic and they disappeared in a flash.🙂 Good to know that the old-fashioned oats worked well. I’ve been a bit hesitant to try it but now I’m going to have to!
Jill
Thank you for posting that you made these with old fashion oats. It’s all I have! Cheers!
