One Pan Ground Beef with Potatoes

An easy skillet dinner that the whole family will love! It's comforting, flavorful, frugal and made with simple everyday ingredients.

Ingredients

  • ¾ lb. ground beef
  • 1 large onion diced
  • 3 cloves garlic minced
  • 3 tbsp. tomato paste
  • 1 tbsp. Worcestershire sauce
  • 4 cups potatoes, diced into ½ in. chunks (about 4-5 medium potatoes)
  • 2 cups finely diced carrots (about 3 medium carrots, or 2 large)
  • 1 cup beef broth
  • 1 tsp. salt + more to taste if needed
  • ¼ tsp. pepper
  • 4 oz. cream cheese, cubed (full fat, low fat or Neufchatel all work)
  • Parsley for garnish (optional)

Instructions

  • In a large skillet, cook ground beef and onions. Drain.
  • Add remaining ingredients, except cream cheese. Mix thoroughly.
  • Cover and bring to a gentle boil then reduce heat to simmer. Simmer for 20 minutes or until potatoes are tender, stirring occasionally. If you notice that the potatoes are starting to stick, add a small amount of additional broth or water.
  • Remove from heat and stir in cream cheese. Garnish with parsley if desired. Enjoy!

Notes

Dicing: If the potatoes and carrots are diced larger than the sizes given, you will need to increase the cooking time and add more liquid. This tool makes dicing the veggies super quick and easy.
Covering the Potatoes: It's really important that this is covered when cooking the potatoes, otherwise, the liquid will all cook away too quickly and the potatoes will stick and not cook thoroughly.
Broth Substitute: If you don't have beef broth, you can substitute with chicken broth. It's not quite as flavorful, but still delicious.
